  • Table for Two: Summery Peach Cobbler

    Sure, it might be a bit warm outside, but there's nothing better than a country cobbler with a scoop of ice cream on top. Whether you're making it for your SO, your friend, or your very own tummy, this cobbler is sure to bring joy to everyone who tastes it.

    It's a slightly altered version of Paula Deen's cobbler recipe. I made it a few weeks ago for a southern themed party, and I of course messed it up (you'll come to learn that I'm always cursed to do so): I added two cups of sugar to the pie filling instead of one. If this happens (and I don't know why it would for you), just add half a lemon and more cinnamon to the pie filling. Also, don't add any sugar to the breading mixture. The taste evens out-- everyone loved it.

    Ingredients


    For the filling:
    4 cups peeled, sliced peaches
    1 cup of sugar
    1/2 cups of water
    1 tsp. ground cinnamon (or more, it's up to taste)

    For the breading:
    8 tbsp. butter
    1 1/2 cups self-rising flour
    1 1/2 cups milk

    Directions

    Preheat oven to 350 degrees F.

    Put the peaches, sugar, and water in a pot or saucepan, and mix the ingredients together. Bring the mixture to a boil, then turn the heat down to medium to let it simmer for ten minutes or so, then remove the mixture from the heat.

    Put the butter in a 3-quart baking dish and place in oven to melt.

    Mix remaining 1 cup sugar, flour, and milk slowly. Pour mixture over melted butter. Don't stir it! Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, if using. Batter will rise to top during baking. Bake for 30 to 45 minutes.
